EVALUACIÓN DEL CONSUMO DE ALIMENTOS COMO CAMPO DE INVESTIGACIÓN EN VENEZUELA. ASPECTOS TÉCNICOS Y METODOLÓGICOS

Abstract

En los últimos años, ha despertado el interés por estudiar la ingesta dietética, en función de las evidencias científicas que demuestran una relación de causalidad entre el consumo de alimentos y los factores de protección o riesgo para enfermedades crónicas. La evaluación del consumo de alimentos ofrece un campo minado de posibilidades investigativas, las cuales se inician en el conocimiento del tipo y cantidad de alimentos consumidos, pasando por la calidad nutricional de la dieta hasta llegar a la conducta alimentaria y las interrelaciones del individuo con la alimentación. En Venezuela, es posible investigar el consumo alimentario, pero hay que considerar el rigor científico. La vigilancia de los aspectos técnicos y metodológicos garantiza la validez científica de este tipo de investigaciones.

In Venezuela, it is possible to investigate the food consumption, but maintaining the scientific rigor. The monitoring of the technical and methodological aspects assures the scientific validity of this research.
